For this beer, we wanted to highlight an ingredient we haven't explored much for our hoppy beers -- yeast! Conj 11 features a new thiol-enhanced yeast from @escarpmentlabs which was bred to release more tropical flavour compounds from hops and malt. We used a big bed of oats and added a hefty dose of Cascade during fermentation to give the yeast as many tools as possible to produce some interesting flavours. It's one of the most food-friendly beers we've ever brewed!
